for me the jury is out on molecular cuisine at the moment. I’m going to read one of Hervé This’ books to try to have a more informed opinion, but for now I find that it is the polar opposite to where I am coming from, which is more the ethos of “Slow Food”. Interesting reading none the less.

A friend of mine, Monique, sent this to me - it’s her local butcher, but one who is clearly seriously good. As my friend Steve would know (from his days as a journo on the “Meat Traders Journal”), butchers are a bit of a dying breed - here in France as well as back in the UK.
30/10/2007 The Times Interview with Gordon Ramsay
the passion that oozes out of Ramsay is one of the main things that I keep in mind when I’m in need of inspiration. I don’t know his cooking particularly, more the person (or the persona)….which is one of the things that seems to bother Ramsay, and he talks about this in this interview. People judge me and not the food which is prepared in my restaurants, he says….probably true, but when one’s personality is so present in the anglo-saxon media (as his is), it seems only natural (though unfair) to me that it’s his personality which is judged. I for one will be keping a close eye on the development of his restaurant in Paris / Versailles set for Spring 2008.
